Joe Mitchell is 3rd generation Australian cattleman from Inverell NSW. He is highly experienced in raising premium quality cattle with extraordinary attention to the welfare and husbandry of the animals. He now is relocating his entire operation to the NW regions of Tasmania.

"I'm motivated to educate and deliver. Educate on exactly what quality beef is and why it is different to the mainstream. Deliver on this with a consistent, flavorsome, tender and delicious product every time.  The move to Tasmania is a major decision, and is one that is designed to provide a more secure platform for the future generations."

All our Grass fed Angus cattle are grazed on the mineral-rich basalt soils of the New England

Wagyu Rib Fillet (Scotch)

The Wagyu Rib Fillet (Scotch) is without doubt our signature cut. It is elegantly marbled, tender and the fats render the meat with rich, smoky, caramelised flavours.

Angus Grass Fed Tomahawk

The Tomahawk is the Rib Fillet with the bone in. It has beautiful, simple earthly flavours and presents delightfully on any plate.

New England Lamb Racks

Our New England Lamb Racks are succulent, delicate and lovingly prepared. They all come from the New England High Country and are exceedingly sort after.

Wagyu Striploin New York

The Wagyu Striploin is a classic tender cut which carries a delicate strip of fat right down the back of each steak. It has a rich, buttery flavour and is simply perfect on an open grill.
