Babu Ji is amazing - so creative.
They have taken the essence and basis of indian cooking and applied it to contemporary international dishes. For example:
Papdi Chaat - Indian styled “Nachos” made out of chickpea crisps, coriander salsa, potato and chickpeas, drizzled with tamarind and yoghurt and topped with pomegranate seeds.
King Tandoori Prawns marinated in green mango powder and orange (sweet & piquant with a lovely smoked/charcoal flavour)
Deepfried crumbed yoghurt with a creamy and slightly tangy beetroot sauce
And to finish, kulfi on a popsicle stick.
