This is one restaurant to be looking out for. IDES is quite unique, although being in the heart of Collingwood, the atmosphere inside is quite and sophisticated. IDES offers a 6 course degustation menu at $110, which changes regularly, and also an option to have matching beverages with each meal for an extra cost. We were lucky enough to be seated at the Chef’s Table, in view of the pass, and watching our dishes being created was art.
