I visited Mercato @ Daylesford about three months ago.
This restaurant has a cosy atmosphere and lovely ambience, stunning menu - the food was fantastic (High quality! - Eye Fillet, it was cooked to perfection.) and attentive staff.
Price is a fine dining experience but totally worth it!

Went along with discerning guests from Tasmania in a group of 7. We all ordered different meals and all of us were more than pleased with our choice. Absolutely scrummy food. Although we were only going to have a main meal we ended up ordering desserts because we were tempted by what was being carried past our table for other diners. Attentive, friendly and helpful wait staff. Cheerful yet highly professional establishment.

Mercato is a very solid and consistent dining institution in Spa Country. It offers a number of spaces, so you don't feel too crowded in and it often features art works on its walls. Open fire places and smart service augment the extensive menu featuring the usual favourites and often a couple of specials including some vegetarian options. Mondays also offers a "locals Night" where the usual menu is supplemented with a limited selections of mains and glass of wine for $20 - these nights are popular, so best to book first.
