Had the a’la carte dinner. The ambience in the bistro is very nice and the service very polite and professional. Overall I thought the menu was nice but not terribly exciting, but reasonably priced for 5 star. I had the steak. It was nice enough but have had similar dishes at local pubs. I would be happy to pay more and have had a better quality. Dessert list looked nice on the menu but as my guest headed in with the idea of finishing off with gelato, didn’t proceed with dessert as they didn’t have any. I had a cocktail and it was very good quality.

We walked in and asked if they had an tables available before a show, and they happily sat us even though we did not have a reservation. The staff were so attentive and made sure we enjoyed every part of our meal. The steak was to die for and the antipasto platter was very enjoyable too. Not something I'd do too often, but definitely worth it for a special occasion.

Collins Kitchen is the contemporary open plan bistro inside the Grand Hyatt.
We went for the lunchtime buffet.
At $18 for the cold lunch buffet, $23 for the hot lunch buffet or $32 for the full buffet including dessert, this is a standout bargain in the centre of the financial/commercial heartland of Melbourne.
The buffet is well set out (and considering the price point) very well stocked with a good variety of quality food options. Imagine Crown Conservatory on a smaller scale.
Service is a of the expected Grand Hyatt standard.
The Collins Kitchen lunch buffet is most definitely an undiscovered Collins gem.

The Collins Kitchen Sunday brunch is amazing. the kitchen offers the best quality food. My personal faves are the cheeses and Italian hams and the most delicious lamb chops. Also the desert buffet is great, fresh made toffee apples. :)

Would you believe a lunch buffet in a five star hotel for the cost of a two course meal at a regular restaurant? $45? That's what's on offer at Collins Kitchen.

The assortment/choice of food is reasonable considering the price and included Oysters, Salmon, Sushi Rolls, Salads, Fresh Wood fired pizza, Pasta (Spaghetti or Fettuccine), assorted dim sum, various antipasto ingredients, Asian rice dishes (Chicken rice) and a variety of meats - mini burgers, mini steaks, sausages and more. Desserts were a good range with six types of ice creams, an assortment of cakes, fresh baked cookies and other single serve desserts.

Quality wise, the food was fresh and tasted good. The issue I do have is that the cooking staff serving the food to you do not wear rubber gloves when cutting meats, preparing sushi or scooping ice cream into cones. I was really worried when one of the staff was scooping ice cream was holding the cone with a hand that had several band aids around the fingers - who knows how old these band aids were??!! Another staff member went from cooking pasta and adding ingredients (parmesan cheese, garlic, spring onion) with his hands and then cutting pieces of chicken with the same hand, even if his hands are clean, you don't necessarily want the smell of parmesan cheese on a Chinese chicken dish. The place also does a la carte which caused some confusion with what was for buffet and what was a la carte. The cooking is completed in a central area which is on display for all to see, and the a la carte items are placed in an area that can be easily mistaken for further fare on offer. One of the chefs totally lost it and blew up and screamed at one of our guests for touching the a la carte dish he had put out for serving yet there was no sign saying that these dishes were not part of the buffet! Hardly professional or courteous! They need to put a sign there saying it is a la carte only!

The wait staff are very attentive and looked after us well. It is just the Kitchen staff who probably need a bit more training on food handling and safety!

On a quality and value count, this place provides great quality and value for what is on offer. It is the service that needs to be lifted to be part of a five star hotel!

the food is not as impressive as I thought for a 5 star hotel. the food menu just simple and you can get it from other fusion restaurants. the service was OK.. they did not deliver the 5 star hotel customer service.

Unimpressed. I went as part of a group. Due to the size of our group, the restaurant essentially forced us to order the set grazing menu. I have food allergies & vegetarian, and was therefore significantly restricted to whatever menu they designed. My $85 menu essentially consisted of very basic items: sushi, a cucumber salad, a really ordinary pasta with minimal accompaniments, a very bland dish of stirfried rice noodles again with little else accompanying the noodles, and a dessert of a few pieces of fruit. I'd expect a little more effort for my $85.

Hi Rosep1, what an expensive (and disappointing) experience. Being a family of vegetarians, we too have been left disappointed (and hungry) by a couple establishments and cannot help but think we have funded the carnivores amongst us (who have enjoyed copious quantities seafood and expensive cuts of meat), while we have been left with unimaginative salads, the dreaded quiche and inexpensive pasta dishes. While these selections might have been somewhat more acceptable twenty years ago, some of us expect a little better in this day and age of culinary advancement. Thank you kindly for the heads-up! Quite cheap for a five star hotel located in the city, and the presentation was spectacular. In all a great addition to one of the most beautiful hotels in Melbourne. Definitely will be back!

Collin's Kitchen was part of the re vamp of the Grand Hyatt, the renovation looks magnificent and the lunch was absolutely delicious. Service was first class and it was very affordable for a city hotel.
