First and foremost they make a nice coffee, nice as in its like a hug for your taste buds and a holiday for your brain.
Before Seven Seeds, St Ali, Proud Mary etc etc, Quists was THE place to go for all your coffee roasting, brewing and tasting needs. It still remains the old faithful. Whilst the roasts are not as distinctive as the boutique varities, they are an acceptable alternative if you do not want to pay a significant premium. Conveniently located in the CBD, they stock a good range of beans, and the staff are very helpful in their recommendations.
Tried their coffee beans several times, and for me it consistently lacks that fresh middle palate fruit that really fresh coffee has. It has more of the dark chocolate notes, but bordering on the burnt side, as if it has been over-roasted, which to me it has been. For me, it is not as fresh as the coffee from the Queen Vic market coffee shop. I intend to discuss this again with the shop and change this review if warranted. They tell me that so far that they sell over a ton of house blend each week, but so far all I can see is that a lot of people in Melbourne are prepared to accept less than really fresh product. Their coffee is not bad but it is definitely not great and as good as it could or should be. I actually have had fresher coffee pre-ground and vacuum packed by UCC coffee in Japan.
Excellent little coffee shop in the city selling an assortment of coffee beans and equipment. The service is really good, they know their coffee and can recommend a blend that will suit your taste. This place is also good to just grab a take-away coffee on the run.
